Pinnah Foods Limited (The Ice Cream Factory & Yin Yang Express) is a restaurant chain with 7 outlets operating in the city of Lagos.

We are recruiting to fill the following positions below:

1.) Head Baker / Kitchen Supervisor

Job Location: Lekki, Lagos
Employment Type: Full-time

Job Responsibilities 


  • Cake decoration.
  • Ensure the proper mixing, baking and preparation of menu items according to specified recipes, standards and guidelines.
  • Organizing and planning regular cleaning schedules to ensure that high levels of hygiene and sanitation are maintained in the kitchen.
  • Ensure that all items produced meet the required quality standards.
  • Ensure the compliance of kitchen staff with laid down policies & procedures.
  • Responsible for ensuring that alL kitchen records are properly updated on a timely basis.
  • Preparation of cakes, other baked goods, desserts and other restaurant orders in line with given standards.
  • Responsible for the training and induction of all kitchen employees.
  • Ensure that all kitchen equipment are kept clean an in excellent working condition
  • Proper organisation and storage of raw materials, baked goods, inventory, kitchen utensils, crockery, cleaning materials etc. in accordance with HACCP standards.
  • Responsible for the overall supervision of the day to day operations of the central kitchen.

Skills & Requirements

  • Minimum of HND certificate
  • At least 3 years of experience in a kitchen supervisory role.
  • A minimum of 5 years of experience in varied kitchen positions including cake baking, pastry making and cake decoration.
  • Strong organisational and leadership skills.
  • Attention to detail.
  • Must be able to write, read and communicate in English fluently.
  • Must have exceptional hygiene and grooming standards.
  • Experience in cake decorating with whipped cream, cream cheese and butter icing.
  • Mathematical skills for working with simple conversions, weights and measures.
  • Ability to work under pressure.

2.) Restaurant Manager (Ice Cream Factory / Yin Yang Express)

Job Location: Lekki, Lagos

Job Overview

  • Overall responsibility for directing and managing the daily operations of the restaurant by ensuring compliance with company standards in all areas of operations, product preparation and delivery, customer relations, restaurant maintenance and repair, inventory management, team building, team members training, internal controls, ensuring that the highest quality products and services are delivered to each customer and other duties as required or assigned.

Duties & Responsibilities

  • Understand completely all company policies, procedures, standards, specifications, guidelines and training programs and administer prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures in line with given guidelines.
  • Ensure staff compliance with the company policies, standards and procedures.
  • Ensure that all customers feel welcome and are given responsive, professional and courteous service at all times.
  • Ensure that the company’s mission and values are understood, embraced and complied with by all staff.
  • Responsible for the induction, training, development and coaching of all team members in accordance with the laid down standards and training schedule
  • Responsible for overall business performance of the restaurant through efficient operations, effective cost controls, scheduling labour, inventory and profit management
  • Ensures compliance to HACCP standards and Health and safety standards
  • Controls profit & loss, by following cash handling policy, internal control procedures, maintaining inventory, managing food and labour costs, reviewing financial reports and taking appropriate actions
  • Responsible for ensuring that all equipments, appliances and fittings are kept clean and in excellent working condition through regular personal inspection.
  • Responsible for the maintenance of equipment, fitting and facilities and ensures prompt repair in the event of any fault or breakdown.
  • Arranging and organizing the rota, responsibilities for all staff by anticipated business activity and planning adequate cover for absence to ensure the smooth running of business operations.
  • Adequate planning and co-ordination of team members to ensure and that all orders are completed in a timely manner to meet our “customer waiting time standards”.
  • Ensure that ALL inventory received and final product meet the required QUALITY standards.
  • Responsible for planning and organising local store marketing activities.
  • Managing and monitoring the restaurant budget to ensure that set targets are met.
  • Achieve company objectives in sales targets, food costs, service, quality, appearance of restaurant and sanitation and cleanliness through continuous training of employees and creating a positive, productive working environment.
  • Ensure that all food and products are consistently served according to the restaurant’s portioning and serving standards.
  • Responsible for minimizing wastage by ensuring the efficient use of resources (e.g. packaging, stationery, disposables, etc).
  • Responsible for ensuring that all required records (sales, inventory, food cost, stock, wastage etc) are properly updated on a daily basis or as and when required.
  • Providing daily and weekly sales, profit and other management reports to Management.
  • Responsible for handling and resolving customer complaints

Qualifications & Requirements

  • Possess at the minimum of HND certificate or equivalent (university degree preferred)
  • At least 2 years of supervisory experience in a restaurant or retail environment (preferably a global brand) including Profit & Loss responsibility
  • Proficient in MS Office
  • Strong written and oral communication skills for managing business admin
  • Proven leadership skills
  • Strong planning and organisational skills
  • Energy and stamina.

3.) Quality Assurance & Production Manager

Job Location: Lekki, Lagos
Employment Type: Full-time

Duties & Responsibilities

  • Conduct regular checks to ensure compliance of central production portioning standards (where applicable).
  • Ensure proper storage and disposal of expired products in line with given standards.
  • Ensure that all materials received into the store meet the approved standards and specifications given by the company (e.g., size, quality, brand, expiration date etc).
  • Ensure the safe use of equipment and schedule regular maintenance.
  • Organizing and monitoring workflow in production/plan production schedule.
  • Compiling production records; record batch weights and measurements.
  • Visual quality inspection, processes and outputs
  • Check production output according to specifications.
  • Identify issues in efficiency and suggest improvements.
  • Constant communication with other production heads.
  • Ensuring and maintaining safe work environment.
  • Monitor the various aspects of production to ensure final product meets set specifications.
  • Prepare and present periodic reports to update company management on production operations.
  • Proffering recommendations to management on ways to increase product quality.
  • Ensure all company regulations and government legislations are adhered to.
  • Meet or exceed performance metrics including efficiency in production.
  • Inspect raw materials against pre-set quality standards before taken into the store.
  • Ensure compliance with all safety standards, sanitation,GMP and HACCP policies and procedure.
  • Work closely with the Store Manager to ensure finished product meets desired specifications.
  • Devise and establish a company’s quality procedures, standards, and specifications
  • Understanding legal, health and safety standards for the business and ensuring that such standards are met
  • Monitoring the production line and stopping production when they notice any product defects or improper safety mechanisms
  • Devise procedures to inspect and report quality issues
  • Monitor all operations that affect quality
  • Assure the reliability and consistency of production bychecking processes and final output
  • Analyze production and quality control to detect and address issues.
